Eat: Gazpacho

1 bottle (32 ounces) of Granny Blossom’s Bloody Mary mix
1 cup chopped cucumbers
1 cup chopped onions
1 cup chopped green pepper
1/2 cup diced or shredded carrots
1/2 cup olive oil
Parsley or chives, chopped
Sour cream or yogurt

Place first five ingredients in a large bowl. Gradually stir in 1/2 cup olive oil. Chill for four hours. Serve in a soup bowl, garnish with chopped parsley and chopped chives. Top with a spoonful of sour cream or yogurt.
